Ingredients

Puff Pastry Wreath Base

Filling

  • 1 whole burrata (approx. 125-150 g) Creamy and indulgent, the heart of your wreath.
  • 2 whole ripe peaches, sliced into wedges Juicy and aromatic, they bring a sweet touch.
  • 1 tsp olive oil Adds richness and enhances the flavor of grilled peaches.
  • 1 pinch salt Enhances the flavors of the ingredients.
  • 40 g roasted pistachios, roughly chopped Crunchy with a slightly sweet flavor.

Finishing Touch

  • 1-2 tbsp balsamic glaze A tangy finish that perfectly ties the dish together.
  • fresh basil or thyme (optional) For a touch of herbaceous freshness.

Instructions

Preparation

  • Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper.
  • Shape the puff pastry on the tray into a rough circle, cutting a small circle from the center to create the wreath shape.
  • Fold and crimp the outer edges slightly, then brush the entire surface with the beaten egg and sprinkle on sesame or poppy seeds if desired.

Baking

  • Bake in the preheated oven for 20-25 minutes until puffed and golden brown. Let it cool slightly.

Grilling Peaches

  • Heat a grill pan over medium-high heat and add a splash of olive oil.
  • Grill the peach wedges for 2-3 minutes per side until they acquire beautiful char marks.

Assembly

  • Place the burrata in the center of your cooled wreath.
  • Arrange the grilled peaches over the pastry, scattering pistachios on top.
  • Drizzle generously with balsamic glaze and serve immediately.

Notes

For a quicker approach, use pre-made puff pastry. Ensure your ingredients are at room temperature, especially the burrata. Don’t rush grilling the peaches for the best sweetness.
