Ingredients

For the rolls

  • 1 large cucumber, thinly sliced lengthwise Use a mandoline for even slices.
  • 100 g feta cheese, crumbled Could be substituted with goat cheese or cream cheese.
  • 2 tbsp almonds, finely chopped Can substitute with pine nuts or walnuts.
  • 1 tbsp honey Ensure honey is gluten-free if needed.
  • 1 tbsp balsamic vinegar
  • to taste freshly ground black pepper
  • a few fresh mint leaves, for garnish Optional, for extra flavor.

Instructions

Preparation

  • In a small bowl, mix the crumbled feta and finely chopped almonds until well combined.

Assembly

  • Take a cucumber slice and place a small spoonful of the feta-almond mixture on one end.
  • Gently roll the cucumber slice tightly around the filling. Secure with a toothpick if needed.

Drizzle

  • In a separate bowl, whisk together honey and balsamic vinegar until smooth.

Serve

  • Arrange the cucumber rolls on a serving platter and drizzle with the honey balsamic mixture.
  • Garnish with fresh mint leaves and a sprinkle of black pepper.

Notes

For a more flavorful filling, consider adding garlic powder or lemon zest. Store leftovers in an airtight container for up to 2 days.
