Ingredients

For the sushi rolls

  • 1 large cucumber The star of the dish, it brings a refreshing crunch.

For the whipped feta

For the pistachio furikake

  • 2 tbsp finely chopped pistachios Nutty and rich, adding a crunch.

Instructions

Make the Whipped Feta

  • In a food processor, combine the standard feta, Greek yogurt, and olive oil. Blend until the mixture is smooth and creamy, adding black pepper to taste. Cover and chill slightly in the refrigerator.

Prep the Cucumber Wraps

  • Use a mandoline slicer or a vegetable peeler to slice the cucumber lengthwise into very thin ribbons. Pat each ribbon dry with a paper towel.

Mix the Filling

  • In a mixing bowl, gently fold together the chilled whipped feta, chopped smoked salmon, fresh dill, and optional lemon zest. Be careful not to overmix.

Assemble the Sushi Rolls

  • Take 1-2 cucumber ribbons and overlap them slightly. Place about a heaping teaspoon of the filling at one end of the ribbons and carefully roll it tightly. Place seam-side down on a serving plate.

Make the Pistachio Furikake

  • Using a dry skillet over low heat, lightly toast the sesame seeds and chopped pistachios until golden and fragrant, about 2-3 minutes. Mix these with sea salt, dried nori, and chili flakes to create a flavorful furikake.

Top & Serve

  • Sprinkle the cucumber sushi rolls generously with the pistachio furikake before serving cold.

Notes

For added flavors, consider marinating the smoked salmon in lemon juice for 15 minutes before mixing. Leftover whipped feta can be used as a spread or dip. Enhance presentation by garnishing with fresh herbs or edible flowers.
