Instructions

Crust Preparation

  • Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan thoroughly.
  • In a bowl, combine 2 cups of Oreo crumbs with 1/4 cup melted unsalted butter and mix until it feels like damp, crumbly sand.
  • Press the mixture firmly into the bottom of the prepared pan and place it in the oven for 10 minutes.
  • Let the crust cool completely.

Cheesecake Filling Preparation

  • In a large bowl, beat 24 oz of softened cream cheese until smooth.
  • Gradually add 1 cup of granulated sugar and mix well.
  • Incorporate 1 cup of sour cream and 1 teaspoon of vanilla extract.
  • Add 3 large eggs one at a time, beating well after each addition.
  • Mix in 2 tablespoons of blue food coloring until beautifully integrated.
  • Gently fold in 1/2 cup of mini chocolate chip cookies.

Baking and Cooling

  • Pour the cheesecake batter into the cooled crust and spread it evenly.
  • Transfer to the oven and bake for 60-70 minutes until the center is just set.
  • Turn off the oven, leaving the cheesecake inside for an hour to cool gradually.
