Preparation

  • Activate the Yeast: Mix the warm water, pickle juice, sugar, and yeast in a small bowl. Allow this mixture to sit for 5-7 minutes until foamy.
  • Prepare the Dough: In a large bowl, combine the flour and salt. Pour in the yeast mixture and olive oil. Stir until the dough comes together, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
  • Incorporate Dill: Knead in the chopped dill pickles and fresh dill until evenly distributed.
  • First Rise: Place the dough in an oiled bowl, cover, and let rise in a warm area for about 1 hour or until doubled in size.
  • Shape the Dough: Roll out the risen dough into a rectangle, brush with olive oil, and sprinkle with oregano and garlic powder. Layer sliced pickles on top and roll the dough into a loaf shape.
  • Second Rise: Transfer the rolled dough into a greased loaf pan, cover, and let rise for another 30 minutes.
  • Bake: Preheat your oven to 375°F (190°C). Brush the top with olive oil and sprinkle with sesame seeds and optional poppy seeds. Bake for 30-35 minutes or until golden brown and sounds hollow.
  • Cool and Serve: Let cool slightly in the pan before transferring to a wire rack to cool completely. Slice and enjoy.

Notes

For a softer crust, place a pan of water in the oven while baking. Brush the loaf with melted butter after baking for shine and flavor. Consider spicy pickles for a zesty twist. Longer resting enhances flavor.
