Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 baking dish.
  • In a skillet, melt a bit of butter and cook the celery and onion until soft, about 5 minutes.
  • In a large bowl, combine the stuffing mix with chicken broth and melted butter, mixing gently to moisten the stuffing. Let it soak for 5 minutes.
  • In another bowl, combine the cream of chicken soup, sour cream, garlic powder, and thyme. Stir in the sautéed vegetables and chopped chicken until everything is well-coated.
  • Spread half of the soaked stuffing mix into the bottom of your greased baking dish. Pour the creamy chicken mixture over this layer, then top with the remaining stuffing.

Baking

  • Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
  • Once out of the oven, sprinkle with fresh parsley if desired and serve warm.

Notes

For quick preparation, use leftover rotisserie chicken. Consider adding cooked vegetables like peas or carrots for added nutrition. Broil the casserole for a few minutes after baking for a crispy texture.
