Main Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1/2 cup sour cream
  • 1 box stuffing mix (6 oz)

Instructions

Preparation

  • Start by placing the boneless, skinless chicken breasts at the bottom of your crockpot.
  • In a mixing bowl, combine the cream of chicken soup, sour cream, low-sodium chicken broth, garlic powder, and onion powder. Stir until all ingredients are well blended and creamy.
  • Pour the creamy mixture evenly over the chicken breasts in the crockpot.
  • Sprinkle the stuffing mix generously over the creamy chicken mixture.
  • Gently press down the stuffing mix to ensure it soaks in the flavors.

Cooking

  • Cover the crockpot and cook on LOW for 6-7 hours or on HIGH for 3-4 hours.
  • Once cooked, shred the chicken directly in the pot using two forks.
  • Gently mix everything together so that the stuffing is nicely incorporated.

Garnishing

  • Sprinkle chopped fresh parsley on top before serving.

Notes

Consider substituting turkey breasts or chicken thighs for different flavors. Adding vegetables like carrots or frozen peas can enhance nutrition. The dish can be made a day in advance by preparing the creamy mixture the night before.
