Instructions

Preparation

  • Preheat oven to 375°F (190°C).
  • Press the pie crust into a 9-inch dish and prick the base with a fork.
  • Pre-bake the crust for 8 minutes.
  • In a pan over medium heat, add olive oil and sauté the chopped onion for about 5 minutes until soft.
  • Add chopped spinach and cook for 2 more minutes until it wilts; let the mixture cool slightly.
  • In a mixing bowl, whisk together ricotta cheese, eggs, heavy cream, grated Parmesan, nutmeg, salt, and pepper until creamy.
  • Gently stir in the cooled spinach and onion mix.
  • Pour the filling into the pre-baked pie crust.
  • Bake the quiche for 35–40 minutes or until the top is set and golden brown.
  • Allow to cool slightly before slicing.
  • Serve warm or at room temperature.

Notes

Consider using fresh herbs like basil or chives. Add sautéed mushrooms or sun-dried tomatoes for variations.
