Ingredients

For the Ice Cream Base

  • 300 ml whole milk Rich and creamy base for the ice cream.
  • 300 ml heavy cream Adds a silky texture.
  • 100 g caster sugar For sweetness.
  • 4 pieces egg yolks Essential for custard richness.
  • 120 g feta cheese (crumbled, best quality) Provides salty tang.
  • 1 tsp lemon zest Zesty notes.
  • 1 pinch salt Balances sweetness.
  • 4 tbsp runny honey Natural sweetness.

For the Phyllo Shards

  • 4 sheets phyllo dough For crispy shards.
  • 3 tbsp melted butter Gives richness.
  • 1 tbsp sesame seeds or nigella seeds (optional) Adds unique flavor.
  • 1 pinch flaky salt For contrast.

For Garnish

  • Crushed pistachios For garnish.
  • Extra lemon zest For finishing touch.
  • Tiny oregano or mint leaves For visual appeal.

Instructions

Make the Custard Base

  • In a saucepan, heat the whole milk and heavy cream over medium heat until steaming, ensuring it doesn’t boil.
  • In a separate bowl, whisk together the egg yolks and caster sugar until pale and fluffy.
  • Gradually pour the warm milk over the yolks while whisking constantly.
  • Return this mixture to the pot and cook on low heat, stirring continuously until it thickens.

Infuse with Feta & Chill

  • Remove the custard from the heat and stir in the crumbled feta, lemon zest, and a pinch of salt.
  • Blend until smooth and allow it to cool to room temperature before chilling in the refrigerator for at least 4 hours.

Churn the Ice Cream

  • Once chilled, pour the mixture into an ice cream machine and churn according to the manufacturer’s instructions.
  • Transfer to a container and freeze for 2–4 hours to firm up.

Bake the Phyllo Shards

  • Preheat your oven to 180°C (350°F).
  • Lay the phyllo sheets, brush with melted butter, and sprinkle with seeds and flaky salt.
  • Layer and fold before baking for 8-10 minutes or until golden brown.

Warm the Honey

  • Warm the honey gently with a small sprig of thyme or rosemary until fragrant and remove herbs before serving.

Assemble and Serve

  • Scoop ice cream into bowls, drizzle with warm honey, and top with crushed pistachios and lemon zest.
  • Garnish with oregano or mint leaves.

Notes

Use the best quality feta for best results and don't rush the chilling process for a better texture.
