Ingredients

For the dressing

Instructions

Preparation

  • Toast the pecans in a dry skillet over medium heat for about 3–4 minutes until fragrant. Let them cool.
  • In a small bowl, whisk together olive oil, balsamic vinegar, and honey. Season with salt and pepper to taste.
  • In a large bowl, lay down the fresh baby spinach as the base and layer on the blueberries, raspberries, and mandarin slices.
  • Sprinkle the toasted pecans and crumbled feta over the top. Drizzle the honey-balsamic dressing just before serving.

Notes

For extra flavor, marinate the spinach in a little olive oil and vinegar for about 10 minutes before assembling the salad. You can mix and match berries or use sunflower/pumpkin seeds instead of nuts based on dietary needs.
