Instructions

Preparation

  • Let the lamb chops sit out for 20–30 minutes to reach room temperature.
  • Using paper towels, pat the lamb chops dry and season both sides generously with Kosher salt and freshly ground black pepper.

Cooking

  • Place a cast-iron skillet over medium-high heat.
  • Stand the chops on their fat side and press gently with tongs for about 5 minutes to render the fat.
  • Lay the chops flat in the skillet and sear for about 3 minutes on each side until a rich, golden-brown crust forms.
  • Lower the heat to medium-low and remove most of the excess fat from the pan.
  • Add the melted butter, chopped garlic, and fresh thyme to the skillet; stir until the butter begins to foam and the garlic becomes fragrant.
  • Spoon the garlic butter over the lamb chops, cooking for an additional minute.
  • Transfer the chops to a plate, pour the buttery garlic sauce on top, and serve immediately.

Notes

Consider marinating the lamb chops for a few hours in a mixture of olive oil, garlic, and herbs to deepen flavors. Avoid overcrowding the pan for perfect searing.
