Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a loaf pan or line it with parchment paper.
  • In a large bowl, combine the ground chicken, eggs, grated Parmesan, shredded mozzarella (for inside), almond flour, milk, minced garlic, parsley, onion powder, Italian seasoning, salt, and pepper. Mix until fully combined.
  • Transfer the mixture into the prepared loaf pan and smooth out the top evenly.

Cooking

  • Place the pan in the preheated oven and bake uncovered for 30 to 35 minutes.
  • After baking, sprinkle the remaining shredded mozzarella on top.
  • Switch to broil for 3 to 5 minutes, keeping an eye on it until the cheese is bubbly and golden brown.
  • Let it rest for about 10 minutes before slicing.
  • Garnish with fresh parsley before serving.

Notes

For best results, let the mixed meatloaf sit in the fridge for 30 minutes before baking to deepen the flavors. If the ground chicken is extra lean, consider adding olive oil for moisture.
