Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the ground chicken, seasoned breadcrumbs, eggs, grated Parmesan cheese, minced garlic, finely chopped onion, milk, chopped parsley, Italian seasoning, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
  • Transfer the mixture to a baking sheet lined with parchment paper and shape it into a loaf.
  • Brush the top of the meatloaf with olive oil.

Cooking

  • Place the meatloaf in the preheated oven and bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
  • If using, sprinkle the mozzarella cheese on top during the last 10 minutes of baking.

Serving

  • Once done, remove the meatloaf from the oven and let it rest for 10 minutes.
  • Slice the meatloaf and serve hot with your favorite sides.

Notes

Use fresh garlic and parsley for maximum flavor. Ground chicken can be substituted with ground turkey. Consider adding finely chopped vegetables for added nutrition.
