Instructions

Preparation

  • Wash the bok choy thoroughly under cold water to remove any dirt, pat dry, and chop into bite-sized pieces.

Cooking

  • In a large skillet or wok, heat the oil over medium-high heat. Add the minced garlic, grated ginger, and half of the chopped scallions. Sauté for about 1 minute until fragrant.
  • Add the thicker white stems of the bok choy to the skillet. Stir-fry for 2 to 3 minutes until they start to soften. Then, add the leafy greens and continue to stir-fry for another 2 minutes until wilted but still vibrant.
  • In a small bowl, combine the soy sauce, rice vinegar (or lime juice), chili flakes, honey, and cornstarch mixed with water. Stir well to create a smooth sauce.
  • Pour the sauce over the cooked bok choy, tossing to ensure everything is well coated. Simmer and thicken for 1 to 2 minutes, then finish with toasted sesame seeds and the remaining scallions before serving.

Notes

For an extra nutty flavor, consider adding a splash of sesame oil at the end. You can include various vegetables like bell peppers or snap peas. For a vegan version, substitute honey with maple syrup. Add tofu or chicken for protein.
