Ingredients

For the Beet Stacks

  • 3 pieces golden beets, roasted & sliced Should be wrapped in foil and roasted.
  • 2 pieces red beets, roasted & sliced Complementary to the golden beets.
  • 1 ball fresh burrata cheese, torn into pieces Must be fresh for best texture.
  • 1/4 cup pistachios, toasted & chopped Adds a crunchy contrast.
  • 1 tbsp extra virgin olive oil For drizzling.
  • 1 tbsp honey Adds a hint of sweetness.
  • 1/2 tsp flaky sea salt To enhance flavors.
  • 1/2 tsp black pepper For added warmth and depth.
  • 1 piece fresh thyme, for garnish Adds aromatic finish.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Wrap the golden and red beets individually in aluminum foil and place them on a baking sheet.
  • Roast for 45–50 minutes, or until tender when pierced with a fork. Allow to cool slightly before peeling off their skins and slice into 1/2-inch thick rounds.

Assembly

  • Start with a slice of the golden beet as the base, spoon a portion of the creamy burrata on top, then add a slice of the red beet. Continue layering in this manner and finish with another dollop of burrata.

Garnish & Drizzle

  • Sprinkle the chopped toasted pistachios over the top. Drizzle with extra virgin olive oil and honey. Finish with orange zest, flaky sea salt, and black pepper.

Serve

  • Garnish with fresh thyme and serve the stacks immediately for best flavor.

Notes

For variations, consider using roasted sweet potatoes or different herbs. Ensure beets are fully roasted for best results. Fresh burrata is crucial for quality.
