Ingredients

For the Cobbler

  • 110 g 110 g (1 stick) butter Melted in the baking dish.
  • 200 g 200 g (1 cup) sugar For the batter.
  • 30 g 30 g (1/4 cup) unsweetened cocoa powder For the batter.
  • 225 g 225 g (1 3/4 cups) all-purpose flour For the batter.
  • 10 g 10 g (2 teaspoons) baking powder For the batter.
  • 200 g 200 g (3/4 cup + 1 tablespoon) milk For the batter.
  • 10 g 10 g (2 teaspoons) vanilla extract For the batter.
  • 150 g 150 g (2/3 cup) sourdough starter or discard For the batter.
  • 100 g 100 g (1/2 cup) semi-sweet chocolate chips For the batter.

For the Topping

  • 330 g 330 g (1 2/3 cups) sugar (for topping) Sprinkled over the cobbler.
  • 40 g 40 g (1/3 cup) cocoa powder (for topping) Sprinkled over the cobbler.

For Assembly

  • 480 g 480 g (2 cups) boiling water Poured over the topping.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a 9x9-inch baking dish, melt the 110 g of butter until it’s fully melted.
  • In a mixing bowl, combine 200 g of sugar, 30 g of cocoa powder, 225 g of all-purpose flour, and 10 g of baking powder. Mix well.
  • Add in the 200 g of milk, 10 g of vanilla extract, and 150 g of sourdough starter to the dry ingredients. Stir until you achieve a smooth batter.
  • Fold in the 100 g of semi-sweet chocolate chips.

Assembly

  • Spread the thick batter evenly over the melted butter in the baking dish.
  • In a separate bowl, mix together 330 g of sugar and 40 g of cocoa powder. Sprinkle this mixture evenly over the batter.
  • Carefully pour 480 g of boiling water over the top of the mixture. Don’t stir.

Baking

  • Place the baking dish in your preheated oven and bake for 35-40 minutes.
  • Let the cobbler cool slightly before serving.

Notes

For the best flavor, use fresh sourdough starter. Serve with ice cream or garnish with whipped cream.
