Instructions

Marinate the Chicken

  • In a mixing bowl, combine 3 tablespoons of olive oil, the juice of one lemon, minced garlic, oregano, cumin, paprika, salt, and pepper. Whisk until well blended.
  • Coat the chicken pieces in the marinade, ensuring they are thoroughly covered. For best results, cover and refrigerate for at least one hour, or overnight.

Make the Tzatziki

  • In a separate bowl, combine Greek yogurt, grated cucumber, minced garlic, 1 tablespoon of olive oil, fresh dill, the juice of half a lemon, salt, and pepper. Mix until creamy.
  • Chill in the refrigerator for at least 30 minutes.

Cook the Chicken

  • Preheat a skillet or grill pan over medium-high heat.
  • Remove chicken from marinade and cook for about 4-5 minutes on each side until done.
  • Let the chicken rest for 5 minutes before slicing.

Warm the Pitas

  • Heat each pita in a dry skillet for about 30 seconds on each side. Keep warm in a clean towel.

Assemble the Gyros

  • Spread tzatziki on each warm pita.
  • Top with sliced chicken, red onion, cherry tomatoes, feta cheese, and lettuce leaves.
