Instructions

Prepare the Dressing

  • In a medium bowl, whisk together the Greek yogurt, olive oil, lime juice, minced garlic, oregano, salt, and pepper. Make sure everything is well combined. Stir in the fresh herbs and set aside to let the flavors meld.

Assemble the Salad

  • Take a bowl and arrange the romaine or mixed greens as the salad base. Layer on the sliced grilled chicken, avocado, halved cherry tomatoes, cucumber, sweet corn, and optionally the dollop of guacamole.

Drizzle & Serve

Notes

For perfectly grilled chicken, marinate it in olive oil, lime juice, and spices for 30 minutes before grilling. If short on time, rotisserie chicken can be used as a substitute.
