Instructions

Preparation

  • In a large skillet, warm up 2 tablespoons of olive oil over medium heat. Once the oil is shimmering, add the chopped onion and minced garlic. Sauté for 2-3 minutes until they soften and become fragrant.
  • Add the ground beef and cook, stirring occasionally, until it turns brown and is thoroughly cooked, about 5-7 minutes. Drain excess fat if necessary.
  • Stir in the diced sweet potatoes, smoked paprika, dried oregano, and season with salt and black pepper. Cover the skillet and let it cook for about 10 minutes, stirring occasionally, until the sweet potatoes are tender.
  • After the sweet potatoes are tender, stir in the diced zucchini and cook for an additional 5 minutes.
  • Remove the skillet from heat and garnish with freshly chopped parsley. Serve warm.

Notes

Customize with seasonal vegetables or add cheese during cooking for extra flavor. This dish is also great for meal prep.
