Instructions

Preparation

  • Preheat your oven to 400°F or prepare your grill to medium-high heat.
  • In a medium bowl, combine the BBQ sauce ingredients: BBQ sauce, soy sauce (or coconut aminos), pineapple juice, ground ginger, and brown sugar or honey (if using). Mix well and set aside.
  • Slice the yellow and red bell peppers, red onion, and pineapple.
  • Season the chicken breasts with garlic powder, smoked paprika (if using), salt, and pepper.
  • Toss your sliced veggies with olive oil to ensure they are lightly coated.
  • Cut large sheets of aluminum foil. Lay each chicken breast in the center of a sheet. Top with sliced veggies and pineapple.
  • Spoon your prepared BBQ sauce over the chicken and veggies.
  • Fold the foil over the chicken and veggie mixture, crimping the edges to create a sealed packet.
  • Place the foil packets on a baking tray and bake for 25-30 minutes or grill for about 20-25 minutes, flipping halfway through.
  • Carefully open the packets and garnish with green onions, cilantro, or parsley before serving over rice or quinoa.
