Instructions

Preparation

  • Cut out 4 sheets of heavy-duty foil, about 12 inches long each.
  • Divide chicken, pineapple, bell peppers, and onion evenly onto each sheet of foil.

Cooking

  • Drizzle each mixture with olive oil, and sprinkle salt and pepper to taste.
  • Add 2 tablespoons of BBQ sauce to each packet and toss gently to combine.
  • Fold the foil tightly around the mixture to seal the packets.
  • Cook on the grill for 15-18 minutes or in the oven for 20-22 minutes, checking that the chicken reaches 165°F (75°C).

Serving

  • Carefully open the packets to avoid steam, garnish with green onions or cilantro, and serve over warm rice.
