Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a medium skillet, heat 1/2 tablespoon of olive oil over medium heat. Add chopped mushrooms, diced onion, and minced garlic. Sauté for 5-7 minutes until soft and fragrant. Remove from heat and let cool slightly.
  • In a bowl, combine the sautéed mixture with softened cream cheese, shredded mozzarella, grated Parmesan, and dried herbs. Mix until well incorporated.
  • Carefully cut a pocket into each chicken breast with a sharp knife.
  • Generously fill each pocket with the mushroom and cheese mixture, securing openings with toothpicks or twine.
  • In a small bowl, mix remaining olive oil, garlic powder, onion powder, salt, and pepper. Rub this mixture all over the chicken breasts.

Cooking

  • Place the stuffed chicken breasts on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until the chicken is fully cooked (internal temperature should read 165°F or 75°C).
  • Once cooked, let the chicken rest for a few minutes before slicing.
  • Carefully remove toothpicks or twine, slice the chicken, and serve warm.

Ensure cream cheese is softened at room temperature. Feel free to experiment with herbs, and add vegetables like chopped spinach or sun-dried tomatoes for variations. Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months.
