Instructions

Preparation

  • Pour the olive oil into a large pot or Dutch oven and heat it over medium-high heat.
  • Add the beef stew meat into the pot, searing it on all sides until browned. Remove from pot and set aside.
  • In the same pot, add the diced onion, chopped carrots, and celery. Cook for 5-7 minutes until softened.
  • Stir in minced garlic and cook for an additional minute.
  • Return the browned beef to the pot. Pour in beef broth, add pearl barley, bay leaf, thyme, salt, and pepper. Stir to combine.

Cooking

  • Bring the soup to a gentle boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours.
  • Remove bay leaf and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

Notes

For added flavor, try marinating the beef before cooking. Rushing the browning step may lessen the flavor.
