Instructions

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a bowl, combine chicken, olive oil, mustard, garlic, lemon zest, salt, and oregano. Mix well and let marinate for at least an hour or overnight for best results.
  • Cut an onion in half and place it flat side down on a baking sheet lined with parchment. Insert two wooden skewers upright into each half.

Cooking

  • Layer the marinated thighs onto the skewers, flipping each piece for even stacking.
  • Pour water or stock into the base of the pan.
  • Cover with foil if needed and bake for 75–90 minutes until fully cooked and golden.
  • Let the chicken rest briefly, slice thin, and serve.

Notes

For a zesty twist, add a splash of lemon juice to the marinade. Use fresh herbs for enhanced flavor. Can store in the fridge for up to 3 days or frozen for 2 months.
