Instructions

Preparation

  • Trim the top 1–2 inches off the artichoke, snip off the sharp tips of the outer leaves, and rub cut areas with lemon juice.
  • Cut off the stem to level the artichoke's base.

Cooking

  • In a pot, place a steaming basket, add water, lemon halves, garlic, and herbs. Bring to a boil.
  • Steam the artichoke for 25–35 minutes until leaves pull away easily.
  • Let the artichoke cool slightly then scoop out the fuzzy choke at the center.

Roasting

  • Preheat oven to 200°C (390°F). Nestle burrata in the artichoke, drizzle with olive oil, and sprinkle with cracked pepper.
  • Roast for 10 minutes until the cheese is molten.

Serving

  • Transfer artichoke to a platter. Serve with crusty bread or focaccia for dipping.
