Ingredients

Tortilla Base

  • 4 large flour tortillas Soft, tender, and slightly chewy.
  • 1 tbsp vegetable oil For brushing the tortillas.

Filling

  • 1/2 lb ground beef Juicy and rich.
  • 1 tbsp taco seasoning Blend of spices for flavor.
  • 1/2 cup water To simmer the beef.
  • 1 cup refried beans Creamy and smooth for flavor.

Toppings

  • 1 cup shredded Mexican cheese blend Cheddar and Monterey Jack.
  • 1/2 cup enchilada sauce or taco sauce For added zest.
  • 1/4 cup diced tomatoes Fresh and juicy.
  • 2 tbsp sliced jalapeños For a spicy kick.
  • 2 tbsp chopped green onions For freshness.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Brush both sides of the tortillas with vegetable oil and bake on a sheet pan for 5-7 minutes until golden and crispy.

Cooking

  • In a skillet, cook the ground beef over medium heat until browned. Stir in taco seasoning and water, simmer for about 2 minutes.
  • Spread refried beans over two crispy tortillas, top with seasoned beef and another tortilla, then cover with enchilada sauce and cheese.

Baking

  • Bake the assembled pizzas in the oven for 7-10 minutes until the cheese is melted and bubbly.
  • Add diced tomatoes, jalapeños, and green onions on top after baking.

Notes

For a lighter version, consider whole wheat tortillas or lean ground turkey. Experiment with toppings such as grilled vegetables or different cheese blends.
