  • 1 pound Italian sausage Can use halal beef or chicken sausage if needed.
  • 1 medium onion, finely diced
  • 1 large red bell pepper, sliced into strips
  • 1 large green bell pepper, sliced into strips
  • 1 large yellow bell pepper, sliced into strips
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 1 cup shredded mozzarella cheese
  • Sea salt and freshly ground black pepper To taste.

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large skillet over medium heat, cook the Italian sausage until browned.
  • Add the diced onion, sliced bell peppers, and minced garlic to the skillet; sauté for 5–7 minutes until softened.
  • Add the diced tomatoes with juices, season with salt and pepper, and let it simmer for 3–5 minutes.
  • Transfer the mixture to a casserole dish, top with mozzarella cheese, and bake uncovered for 20–25 minutes until the cheese is melted and golden.
  • Let the casserole rest for a few minutes before serving.

Notes

For an extra kick, add a pinch of red pepper flakes while cooking the sausage. You can also mix in spinach or mushrooms for added flavor. Use pre-sliced vegetables to save time.
