Ingredients

For the Sandwich

  • 2 tablespoons butter (for toasting) Melted on the griddle or skillet.
  • 4 oz sliced Gouda cheese Can substitute with another type of cheese if desired.
  • 4 slices dark pumpernickel bread Whole-grain or rye bread can be used as alternatives.
  • 1/2 cup well-drained sauerkraut Drained to avoid sogginess.
  • 8 oz beef kielbasa sausage Can swap for turkey kielbasa for a lighter option.
  • 2 tablespoons Russian dressing Alternately, use a spicy mustard for added kick.

Instructions

Preparation

  • Warm the beef kielbasa in a pan or on a grill until crispy.
  • Slice the browned kielbasa diagonally into 1/4-inch pieces.
  • Spread each slice of dark pumpernickel bread generously with Gouda cheese.
  • Evenly spread Russian dressing over the cheese.
  • Add well-drained sauerkraut on two of the cheese-covered slices.
  • Layer the sliced kielbasa on the two other slices.

Cooking

  • Heat a griddle or skillet over medium heat and melt butter.
  • Place the prepared bread slices with toppings facing up on the griddle, covering loosely with foil.
  • Toast the bread until golden brown and crispy, ensuring the cheese melts.
  • Assemble each sandwich by combining one sauerkraut slice with one kielbasa slice.

Notes

For extra flavor, consider adding chopped green onions or jalapeƱos to sauerkraut. To make bread crunchier, mix garlic powder into the butter before toasting.
