Instructions

Marinate the Beef

  • In a mixing bowl, whisk together soy sauce, brown sugar, sesame oil, garlic, ginger, rice vinegar, black pepper, and sesame seeds until well combined.
  • Add the beef to the marinade, ensuring it is evenly coated. Cover with plastic wrap and let it chill in the fridge for at least 30 minutes.

Cook the Beef

  • Preheat a grill pan or skillet over medium-high heat. Sear the beef slices in batches for about 2-3 minutes per side until browned.
  • Remove and transfer the cooked beef to a plate for later assembly.

Season the Rice

  • In a large bowl, stir together the warm rice, rice vinegar, sugar, and salt until evenly distributed.

Assemble the Stack

  • Start with a generous layer of seasoned rice at the base of a plate or bowl.
  • Place the cooked beef slices on top, followed by cucumber, avocado, shredded carrots, and sliced green onions. Drizzle with spicy mayo if desired.

Notes

For more intense flavor, marinate the beef overnight. Slice against the grain for tenderness. You can also substitute beef with chicken, tofu, or experiment with various toppings like pickled radish or kimchi.
