Ingredients

For the Meatballs

  • 1 lb ground beef (or pork/chicken) Choose ground beef for richness, or chicken/pork for lighter taste.
  • 2 green onions, finely chopped Adds freshness.
  • 2 garlic cloves, minced Elevates flavor.
  • 1 tsp grated ginger For warmth and earthy note.
  • 1 egg Acts as a binder.
  • 1/2 cup breadcrumbs Achieves a crispy outer texture.
  • 1 tbsp soy sauce Adds umami flavor.
  • 1 tbsp gochujang (Korean chili paste) Adds spice and color.
  • 1 tbsp brown sugar Balances the spice.
  • 1 tbsp sesame oil Provides a nutty finish.
  • 1/2 tsp salt Essential seasoning.
  • 1/2 tsp black pepper Essential seasoning.
  • to taste sesame seeds and chopped scallions, for garnish Adds freshness and texture.

For the Spicy Mayo Dip

  • 1/2 cup mayonnaise Creamy base for the dip.
  • 1–2 tbsp sriracha Adjust to taste for spiciness.
  • 1 tsp rice vinegar or lime juice Adds brightness.
  • a pinch sugar Optional, to balance heat.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or aluminum foil and grease it.
  • In a large bowl, mix ground meat, green onions, garlic, ginger, egg, breadcrumbs, soy sauce, gochujang, brown sugar, sesame oil, salt, and pepper until well incorporated.
  • Roll the mixture into 1.5-inch balls and place them evenly on the baking sheet.

Cooking

  • Bake for 18–20 minutes until browned and cooked through. Broil for an extra 2 minutes for caramelization.

Prepare the Spicy Mayo Dip

  • In a small bowl, whisk together mayonnaise, sriracha, rice vinegar or lime juice, and sugar if desired.

Serving

  • Remove the meatballs from the oven, and serve on a plate, drizzled with the spicy mayo dip. Garnish with sesame seeds and scallions.

Notes

For added flavor, try adding a dash of sesame seeds to the meatball mixture. You can prepare the meatballs in advance. Alternate proteins like ground turkey or tofu can be used.
