Instructions

Preparation

  • Begin by slicing the roasted and peeled beets into thin, even rounds, about 1/8-inch thick. Use a small round cookie cutter for uniform shapes.
  • In a small bowl, whip the softened goat cheese with the heavy cream and honey until smooth and fluffy. Season with salt and pepper, then place in a piping bag for easy assembly.

Layering

  • On a serving plate, layer one beet slice, then pipe or spread a generous layer of whipped goat cheese. Sprinkle with finely chopped candied walnuts.
  • Continue layering, using smaller beet slices higher up the stack to create a tapered shape.

Finishing Touches

  • Drizzle the balsamic glaze over the assembled stacks and sprinkle with crushed pistachios and fresh thyme leaves.

Serving

  • Enjoy immediately as an appetizer or as part of a holiday charcuterie board.

Notes

For an easier preparation, consider using pre-cooked or canned beets. To avoid common mistakes, ensure beet slices are thin, and do not over-season.
