Instructions

Preparation

  • Preheat your oven to 425°F (220°C).
  • Season each salmon fillet with salt and pepper.
  • In a mixing bowl, combine ricotta cheese, grated Parmesan cheese, fresh basil, lemon zest, and a pinch of salt and pepper. Mix until smooth.
  • Spread the ricotta mixture on each salmon fillet, placing asparagus spears across the center. Roll up each fillet tightly and place seam-side down on a greased baking sheet.

Cooking

  • Bake for 15 to 20 minutes, until the salmon is cooked through.
  • In a small saucepan, melt butter over medium heat. Add chicken broth and fresh lemon juice, stirring to combine.
  • Whisk in the cornstarch-water mixture and cook until the sauce thickens, about 3 to 5 minutes.

Serving

  • Drizzle the lemon-butter sauce generously over the baked salmon rolls before serving.
