Instructions

Preparation

  • Preheat your oven to 425°F (220°C) to prepare for cooking.
  • Season each salmon fillet with salt and pepper to taste.
  • In a mixing bowl, stir together the ricotta, Parmesan, finely chopped basil, lemon zest, salt, and pepper until uniform.
  • Generously spread the cheese mixture over each salmon fillet.
  • Lay a few asparagus spears diagonally across each fillet before rolling them up tightly.
  • Carefully roll each salmon fillet up, starting from the thinner end, until snug. Place the rolls seam-side down on a greased baking sheet.

Baking and Sauce Preparation

  • Bake the salmon rolls in the preheated oven for 15–20 minutes, or until thoroughly cooked.
  • In a small saucepan over medium heat, melt the butter. Add the chicken broth and lemon juice, followed by the cornstarch mixture. Stir constantly while cooking for about 3–5 minutes until the sauce thickens.
