Ingredients

For the Salmon Rolls

  • 4 fillets salmon fillets Skinless and sliced thinly for easy rolling.
  • 1 lemon zest and juice of 1 lemon Adds zesty brightness.
  • 1/2 cup ricotta or cream cheese Provides creaminess.
  • 2 tbsp chopped fresh basil Enhances the entire dish.
  • 1 clove garlic, minced Infuses warmth into the filling.
  • to taste tsp salt & pepper Essential for flavor enhancement.
  • 1 tbsp olive oil or melted butter Adds richness and helps roast the asparagus.
  • 1 bunch fresh asparagus Tender yet crisp, for the base of the rolls.

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Trim the woody ends of the asparagus and place them on a lined baking sheet.
  • Drizzle the asparagus with olive oil and season with salt and pepper.
  • In a small mixing bowl, combine the ricotta or cream cheese, lemon zest, minced garlic, chopped basil, salt, and pepper until creamy.
  • Lay out each salmon fillet on a clean surface and spread 1–2 tablespoons of the creamy filling along the center.
  • Roll the salmon around the filling tightly, without tearing the fish.
  • Place the rolled salmon seam-side down on top of the prepared asparagus.
  • Drizzle lemon juice and olive oil over the top of the salmon rolls.

Cooking

  • Bake in the preheated oven for 18–20 minutes or until the salmon is cooked through.
  • Garnish with fresh basil and lemon wedges before serving.

Notes

Marinate salmon in lemon juice and olive oil for added flavor. You can assemble the rolls a few hours ahead of time.
