  • 1/4 tsp 1/4 tsp black pepper A touch of heat to round out the taste.

Roasted Tomatoes

  • 2 pints 2 pints cherry tomatoes Sweet and juicy, they caramelize beautifully.
  • 1 tbsp 1 tbsp olive oil For roasting the tomatoes.
  • 1.5 cloves 1.5 cloves garlic, minced More garlic means more flavor!
  • 1 tsp 1 tsp dried oregano Adds a wonderful herbaceous note.
  • 1/2 tsp 1/2 tsp salt To season the tomatoes.
  • 1/4 tsp 1/4 tsp black pepper Enhances flavor.

Pasta

  • 12 oz 12 oz linguine (or preferred pasta) The ideal base for this dish.
  • 1 tbsp 1 tbsp butter (optional) For richness in your pasta.
  • 1/4 cup 1/4 cup grated Parmesan cheese For a salty, nutty finish.
  • 1 tbsp 1 tbsp capers, drained (optional) Adds a briny punch.
  • 2 tbsp 2 tbsp fresh basil, chopped (plus extra for garnish) For vibrant garnishing.
  • 1/2 cup 1/2 cup reserved pasta water To help bring it all together.
  • Lemon wedges Lemon wedges (for serving) For an extra zesty touch.

Instructions

Prep and Marinate

  • Start by prepping your salmon. In a small bowl, mix together the olive oil, fresh lemon juice, minced garlic, chopped basil, lemon zest, salt, and black pepper. Generously brush this mixture onto the salmon fillets and let them marinate for about 15 minutes.

Roast Salmon and Tomatoes

  • Preheat your oven to 400°F (200°C). Toss the cherry tomatoes with olive oil, minced garlic, dried oregano, salt, and black pepper. Spread the tomatoes out on a baking sheet. Place the marinated salmon fillets on a separate tray. Roast the tomatoes for about 15-20 minutes and the salmon for 12-15 minutes.

Cook Pasta

  • While the salmon and tomatoes are roasting, bring a large pot of salted water to a boil. Add your linguine and cook until al dente according to package instructions. Before draining, reserve 1/2 cup of the pasta water.

Combine Pasta

  • In a large skillet, combine the cooked pasta with the roasted cherry tomatoes and their juices. If using, melt the butter now, and gradually add reserved pasta water as needed.

Finish and Serve

  • Mix in the grated Parmesan cheese, fresh chopped basil, and capers if using. Plate the pasta, topping each with a piece of salmon. Garnish with extra basil and lemon wedges.

Notes

Use the freshest ingredients for best flavor. Marinate salmon for up to an hour for more intense flavor. Add spinach or arugula for additional nutrients.
