For the Salmon

Instructions

Roasting the Potatoes

  • Preheat your oven to 400°F (200°C). Toss the halved baby potatoes with olive oil, salt, and freshly ground black pepper in a mixing bowl until well coated.
  • Spread the seasoned potatoes evenly onto a baking sheet and roast for approximately 20 minutes, or until they develop a crisp golden exterior.

Adding the Broccoli

  • After 20 minutes, gently add the fresh broccoli florets to the baking sheet with the potatoes. Toss lightly with remaining oil and seasoning.
  • Return the baking sheet to the oven and roast for another 10 minutes, or until the broccoli is golden and tender.

Searing the Salmon

  • While the vegetables are cooking, heat a skillet over medium heat and add the butter. Allow it to melt and foam.
  • Stir in the minced garlic, lemon zest, and lemon juice, letting them sizzle together.
  • Place the salmon fillets skin-side down into the skillet, searing for 3-4 minutes per side. Spoon the lemon-butter sauce over the top while cooking.

Plating & Garnishing

  • Arrange the roasted potatoes and broccoli on serving plates. Place the salmon fillets on top or alongside the veggies.
  • Drizzle some remaining lemon-butter sauce over the dish and finish off with chopped fresh parsley.

Notes

For extra flavor, consider marinating the salmon for 30 minutes before cooking. Feel free to add other vegetables like asparagus or bell peppers for variety.
