Instructions

Preparation

  • Preheat your oven to 175°C (350°F) and grease a 9x13 inch cake pan.
  • In a large bowl, beat the softened butter and granulated sugar together until pale and fluffy, about 3 minutes.
  • Mix in the eggs one at a time, integrating fully before adding the next. Incorporate the lemon zest and juice.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this to the wet mixture, alternating with the buttermilk.
  • Pour the batter into the prepared cake pan and smooth the top. Bake for 32-36 minutes, or until a toothpick comes out clean. Allow to cool completely after baking.

Glazing

  • In a bowl, whisk together powdered sugar, fresh lemon juice, and lemon zest until smooth. Add food coloring if desired.
  • Once the cake is cool, pour the glaze over the cake and garnish with lemon slices and extra zest.

Notes

For best results, use room temperature ingredients and sift flour to avoid clumps. You can prepare the batter a day ahead, refrigerate, and bake later.
