Instructions

Prepare the Crust

  • Preheat the oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, ensuring some overhang for easy removal.
  • In a mixing bowl, combine the almond flour, coconut flour, salt, lemon zest, and poppy seeds.
  • Pour in the melted butter and honey, mixing until the combination resembles coarse crumbs.
  • Press this mixture evenly into the bottom of the prepared pan to form a solid crust.
  • Bake for 12–15 minutes, or until lightly golden. Remove from oven and let cool completely.

Make the Filling

  • In a separate bowl, whisk together the Greek yogurt, lemon juice, vanilla extract, and beaten eggs until smooth.
  • Gently fold in the additional poppy seeds.

Bake the Bars

  • Pour the yogurt filling over the cooled crust, spreading it evenly to create a uniform layer.

Cool & Chill

  • Allow the bars to cool in the pan on a wire rack.
  • Once cooled, transfer the pan to the refrigerator and chill for at least 3 hours, or overnight for the best texture.
