Instructions

Preparation

  • Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
  • In a medium bowl, mix the graham cracker crumbs, 0.25 cups sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
  • In a large bowl, beat the cream cheese and 1 cup sugar until smooth. Add the eggs one at a time, beating well after each. Stir in sour cream, 0.5 cups lemon juice, lemon zest, and vanilla until combined.
  • Pour the cheesecake filling over the crust, smoothing it out evenly.
  • In a small bowl, whisk together the mango puree, 2 tablespoons sugar, and 1 tablespoon lemon juice. Drop spoonfuls over the cheesecake filling and swirl with a knife.

Baking

  • Bake for 60-70 minutes until the center is set and edges are slightly puffed. Turn off the oven and let cool with the door ajar for 1 hour.
  • Refrigerate for at least 4 hours or overnight before serving.

Serving

  • Release the cheesecake from the springform pan and transfer to a serving plate. Garnish with additional mango slices or lemon zest if desired.
