Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and prepare three 8-inch round cake pans by greasing and flouring them.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large bowl, beat the softened butter and granulated sugar until light and fluffy (3-5 minutes).
  • Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  • Gradually add the flour mixture to the butter mixture, alternating with the buttermilk, and fold in the dragon fruit puree and food coloring.
  • Divide the batter evenly between the prepared pans and smooth the tops.

Baking

  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Frosting and Assembly

  • Beat the softened butter until creamy, then gradually add powdered sugar, heavy cream, vanilla, and dragon fruit puree, stirring until smooth.
  • Once cooled, spread frosting between each cake layer and over the top and sides of the cake.

Decoration

  • Decorate with fresh dragon fruit slices and sprinkle edible flowers around for an elegant touch.

Notes

Use room temperature ingredients for best results. Frozen dragon fruit puree can be used if fresh is unavailable. Adjust baking time for different pan sizes.
