Ingredients

For the Roasted Cauliflower

  • 1 medium cauliflower, cut into bite-size florets
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil for roasting
  • 1 teaspoon paprika
  • 1/4 teaspoon black pepper

For the Creamy Sauce

  • 1/2 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1 cup low-sodium vegetable broth
  • 1 tablespoon olive oil for the sauce
  • 3 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley for garnish
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red chili flakes
  • 1/4 teaspoon pepper, or to taste

Instructions

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a mixing bowl, toss the cauliflower florets with 1 tablespoon of olive oil, garlic powder, paprika, salt, and black pepper.

Roasting

  • Spread the seasoned cauliflower evenly on a parchment-lined baking tray and roast for 20–25 minutes, turning halfway through.

Making the Sauce

  • Heat 1 tablespoon of olive oil in a saucepan over medium heat and sauté minced garlic for about a minute.
  • Add vegetable broth and bring to a simmer, then add heavy cream, Italian seasoning, chili flakes, and sun-dried tomatoes. Simmer for 5 minutes.
  • Stir in grated Parmesan cheese until melted and smooth. Adjust seasoning.

Serving

  • Combine roasted cauliflower with the creamy sauce, stirring until well coated. Garnish with chopped parsley before serving.

Notes

To store leftovers, place in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results. For a vegan option, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
