Ingredients

For the meatballs

  • 1/2 lb ground turkey or chicken Lean and healthy protein.

Instructions

Prepare the Meatballs

  • In a mixing bowl, combine the ground turkey (or chicken), breadcrumbs, the egg, minced garlic, salt, black pepper, and Italian seasoning. Use your hands to mix everything together until well combined.
  • Form the mixture into small meatballs, about 1-inch in size.
  • Heat olive oil in a pan over medium heat and cook the meatballs for 10-12 minutes, turning occasionally, until they are golden brown and cooked through.

Roast the Vegetables

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, toss the cubed sweet potatoes, zucchini half-moons, diced red bell pepper, and chopped onion with olive oil, garlic powder, smoked paprika, salt, and black pepper until well-coated.
  • Spread the vegetables evenly on a baking sheet and roast for about 20-25 minutes, flipping halfway through for even cooking.

Cook the Rice

  • Rinse your chosen rice under cold water until the water runs clear.
  • In a pot, combine 2 cups of water and a dash of salt, and bring it to a boil.
  • Add the rinsed rice, reduce the heat to low, cover, and simmer for about 15 minutes (or according to package instructions) until the rice is tender.

Assemble & Serve

  • Divide the cooked rice into serving bowls. Top each bowl with a generous helping of roasted vegetables and meatballs.
  • Drizzle with a little extra olive oil or sprinkle some fresh herbs if desired. Serve warm and enjoy!

Notes

To ensure perfect meatballs, don't overmix the meat mixture to avoid toughening the texture. You can add grated cheese or fresh herbs for extra flavor. Experiment with seasonal veggies when roasting.
