Instructions

Cook the Chicken

  • Heat olive oil in a large skillet over medium heat.
  • Season the chicken breasts with salt, pepper, oregano, and basil.
  • Add the chicken to the skillet and cook for 5-7 minutes on each side until golden brown and fully cooked.
  • Remove the chicken from the skillet and set aside to rest.

Sauté the Vegetables

  • In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.
  • Add diced red bell pepper and zucchini, continuing to cook for another 3-4 minutes until tender.

Toast the Orzo & Simmer

  • Add orzo pasta to the skillet, stirring for 1-2 minutes to toast slightly.
  • Pour in chicken broth, bringing to a boil, then reduce heat to low and cover.
  • Let it simmer for 10-12 minutes or until the orzo is tender and the liquid is mostly absorbed.

Assemble the Dish

  • Slice the rested chicken into strips.
  • Fold halved cherry tomatoes and sliced chicken into the cooked orzo.
  • Sprinkle with crumbled feta cheese and chopped parsley before serving.
