Instructions

Preparation

  • Warm the olive oil in a pan over medium heat.
  • Add the chopped spinach and sauté for 2 minutes until wilted.
  • Stir in the sun-dried tomatoes, garlic powder, and dried oregano, then remove from heat.

Assembly

  • Spread butter on one side of each slice of bread.
  • Place one slice of bread, buttered side down, in the skillet.
  • Layer with mozzarella, feta, and cheddar cheeses.
  • Spoon the spinach and sun-dried tomato mixture evenly on top.
  • Add the second slice of bread, buttered side facing up.

Grilling

  • Heat the skillet over medium-low heat, cooking the sandwich for 3-4 minutes on each side until golden brown.
  • Gently press with a spatula while grilling for even crispiness.
  • Remove the sandwich from the skillet once both sides are toasted to your liking.

Serving

  • Slice the sandwich in half and serve immediately while warm.
