Instructions

Preparation

  • In a large skillet, drizzle the olive oil and place it over medium-high heat. Allow the oil to warm until it shimmers.
  • Add the ground beef to the skillet and sauté until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.
  • Toss in the chopped red onion and minced garlic. Cook until the onion is translucent.
  • Stir in the chopped red and yellow bell peppers along with the diced zucchini. Sauté for 3-4 minutes until slightly tender.
  • Add halved cherry tomatoes and sprinkle in salt, black pepper, smoked paprika, ground cumin, dried oregano, and optional crushed red pepper flakes. Cook for an additional 2-3 minutes.
  • Remove from heat and fold in fresh parsley and lemon juice.
  • Serve topped with crumbled feta cheese if desired.

Notes

Serve with a refreshing side salad or tuck into a wrap for lunch. Can be made ahead and stored in the refrigerator for up to three days.
