Instructions

Preparation

  • Start by draining the salmon and flaking it with a fork into a large bowl.
  • In a pan, lightly sauté the chopped spinach for about 2 minutes until it wilts, then allow it to cool slightly before squeezing out the excess moisture.
  • In the same bowl with the flaked salmon, add the sautéed spinach, red onion, minced garlic, crumbled feta, breadcrumbs, beaten eggs, parsley, optional dill, lemon juice, zest, oregano, salt, and pepper. Mix everything thoroughly until well combined.
  • Shape the mixture into 6 to 8 patties, each about 3 inches wide.

Cooking

  • Heat a few tablespoons of olive oil in a skillet over medium heat.
  • Cook the patties for approximately 3 to 4 minutes on each side, or until they turn golden brown and crispy.

Serving

  • Serve the warm patties with lemon wedges and tzatziki sauce for dipping. They pair beautifully with a simple salad or warm pita bread.

Notes

For added flavor, let the salmon mixture rest for 30 minutes before shaping the patties. If having trouble keeping the patties intact, chilling them in the fridge for 20 minutes before cooking can help. Experiment with different spices or herbs such as thyme or basil for variations.
