  • 2 cans (6 oz each) salmon, drained and flaked
  • 1 cup fresh spinach, finely chopped and sautéed
  • 1/4 cup red onion, finely diced
  • 2 cloves garlic, minced
  • 1/3 cup crumbled feta cheese
  • 1/2 cup breadcrumbs
  • 2 large eggs, lightly beaten
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh dill, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon grated lemon zest
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • 2-3 tablespoons olive oil for pan-frying
  • Fresh lemon wedges, for garnish
  • Tzatziki sauce, for serving

Instructions

Preparation

  • Thoroughly drain the canned salmon and flake it into small pieces.
  • Sauté the chopped spinach in a small skillet over medium heat for about 2 minutes until wilted. Allow it to cool slightly before squeezing out any excess moisture.
  • In a large mixing bowl, combine salmon, sautéed spinach, diced red onion, minced garlic, feta cheese, breadcrumbs, eggs, parsley, dill, lemon juice, lemon zest, oregano, salt, and black pepper. Mix until well combined.
  • Shape the mixture into 6 to 8 patties and refrigerate for 10 to 15 minutes.

Cooking

  • Heat olive oil in a large skillet over medium heat. Add the patties and cook for about 3 to 4 minutes on each side until golden brown and crispy.

Serving

  • Serve warm, garnished with fresh lemon wedges and tzatziki sauce on the side.

Notes

For added flavor, experiment with spices such as smoked paprika or cumin. For crunchiness, substitute half of the breadcrumbs with crushed cornflakes or panko. Patties can be prepared ahead and stored in the fridge for up to a day before cooking.
