Instructions

Preparation

  • Heat the olive oil in a pan over medium heat. Once warmed, add fresh spinach leaves and sauté for about 5-6 minutes until wilted. Sprinkle with sea salt and set aside.
  • Spread softened butter on one side of each slice of bread. In the same skillet, place two slices of bread butter-side down.

Assembly

  • Evenly distribute the chopped sun-dried tomatoes over the bread slices. Layer half of the feta and cheddar cheeses on top, then add the sautéed spinach. Sprinkle with remaining cheese, oregano, and chili flakes.

Grilling

  • Top with remaining slices of bread butter-side up. Cook for about 5 minutes until the bottom is golden and crisp. Carefully flip and cook another 5 minutes until golden and cheese is melted.

Serving

  • Remove sandwiches from skillet and let rest for a minute. Drizzle with honey if desired and serve immediately.

Notes

Use a panini press for an ultra-crispy texture. Substitute/add ingredients such as olives, artichokes, or roasted red peppers. For creaminess, mix in cream cheese or ricotta with feta.
