Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a 15×10 inch jelly roll pan with parchment paper.
  • In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt until well combined.
  • In a large bowl, beat the eggs with granulated sugar until thick and pale, about 3-5 minutes. Stir in the vanilla extract and vegetable oil until smooth.
  • Gradually add the dry ingredients to the egg mixture, alternating with the milk, until just combined.
  • Pour the batter into your prepared pan, spreading it evenly. Bake for 12-15 minutes or until the cake springs back when lightly touched.

Cooling and Rolling

  • Immediately turn the baked cake onto a clean kitchen towel dusted with powdered sugar. Remove the parchment paper and roll the cake up in the towel, starting from one short side. Allow it to cool completely.
  • In a mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until creamy. Mix in the vanilla extract and milk. Gradually add the flour and stir in the mini chocolate chips and mini M&M's until evenly distributed.
  • Once the cake is completely cooled, carefully unroll it and spread a generous layer of cookie dough evenly over the surface.
  • Spread softened vanilla ice cream over the cookie dough layer, covering the entire surface, and then re-roll the cake tightly.

Freezing and Serving

  • Wrap the cake roll in plastic wrap and freeze it for at least 4 hours, or until firm enough for slicing.
