Instructions

Preparation

  • Wash the beef thoroughly and place it in a pot. Add water, salt, and black pepper.
  • Bring the mixture to a boil and cook for 20–25 minutes until tender.

Cook the Stew Base

  • Blend plum tomatoes, red bell pepper, habanero pepper, and half of the onion until smooth.
  • In a large pan, heat olive oil over medium heat and sauté the remaining onion until softened.
  • Add the blended mixture and boil for about 5 minutes.

Combine and Season

  • Add the tender beef and beef stock to the pan, stirring to combine.
  • Add thyme, bouillon powder, and curry powder, then adjust salt if necessary.
  • Cover and let simmer on medium-low heat for 10 minutes.

Serving

  • Serve hot with rice, fried plantains, or bread.
